1 1/4 Cup All-Purpose Flour
1/4 Cup Granulated Sugar
1 Teaspoon Baking Powder
1/4 Cup Canola Oil
1 1/4 Cup Buttermilk
Mix together flour, sugar, baking powder, and salt in a large bowl. Add oil, egg, and buttermilk and stir until just combined.
Heat a griddle to 350 degrees. Once heated, coat lightly with cooking spray.
Add 1/4 cup of batter to make each pancake to the hot griddle. If you would like to add a mix-in such as chocolate chips or blueberries, sprinkle them onto the top of each pancake.
Heat until small bubbles begin to appear on the top of the batter (a few minutes), then flip each pancake over and cook until heated through.
Makes 6-7 pancakes.
